We love mangoes in our family. My husband is from Taiwan, and when he was a little boy, he used to just pick them off the trees and eat until he could eat no more. My children take after their father, and can go through cases and case of these delicious fruits.I have to admit, I was a bit intimidated by the mango. I couldn't figure out how to open one, and I never knew when they were ripe. Or, I would buy them and not be able to wait until they finally got ripe. My kids love them best when they yield to pressure, and my husband taught me the correct way to open a mango. My daughter learned that if you put them in a paper bag with an apple, they will ripen in a day or two, so now I am a mango expert, I guess, and I love to use them in smoothies. They create such a creamy and flavorful smoothie and if you are doing green smoothies, mango also seems to cut down on the green taste. Here is a great recipe, and following that, a video on how to cut a mango--but my kids just take the Ataulfo mangoes and knead them like a tube of toothpaste, being careful not to break the skin. When they are all squished up, they pop the top off and suck the mango right out. Then, they invert the remaining skin and suck the remains. It's gross, and they do this outside, but they love it!
