Non-Dairy Creamsicle Smoothies PDF Print E-mail



  • Water and meat from one Young Thai Coconut
  • Handful of ice
  • One large tangelo or orange
  • Beans from 1/2 vanilla bean pod
  • 1 c. vanilla almond/oat/rice/hazlenut milk
  • Agave sweetener to taste (optional)
Blend in a high powered blender until smooth. Oh, this is heavenly!

We love mangoes in our family.  My husband is from Taiwan, and when he was a little boy, he used to just pick them off the trees and eat until he could eat no more.  My children take after their father, and can go through cases and case of these delicious fruits.

I have to admit, I was a bit intimidated by the mango.  I couldn't figure out how to open one, and I never knew when they were ripe.  Or, I would buy them and not be able to wait until they finally got ripe.  My kids love them best when they yield to pressure, and my husband taught me the correct way to open a mango.  My daughter learned that if you put them in a paper bag with an apple, they will ripen in a day or two, so now I am a mango expert, I guess, and I love to use them in smoothies.  They create such a creamy and flavorful smoothie and if you are doing green smoothies, mango also seems to cut down on the green taste.

Here is a great recipe, and following that, a video on how to cut a mango--but my kids just take the Ataulfo mangoes and knead them like a tube of toothpaste, being careful not to break the skin.  When they are all squished up, they pop the top off and suck the mango right out.  Then, they invert the remaining skin and suck the remains.  It's gross, and they do this outside, but they love it!

Mango Lassie

  • 1 Mango
  • Juice and meat from one Young Thai Coconut (or 1 cup almond milk)
  • 1 Tbsp of Lemon Juice
  • 1 Banana
  • About 1 Tbsp of honey or agave nectar or sweetener
  • A pinch of Cinnamon or Cardamon
Blend until smooth.  If you have a high powered blender, you will want the banana to be frozen, and quite possible the mango as well.

Sugar

used to think that people who insisted that they did not eat sugar were lying, weird, or had no fun eating.  Now, I understand completely why people would give up processed sugars and I also understand how a family can give it up without sacrificing fun eating.  First, let's look at the similarities between sugar and heroin.

Sugar and Heroin: More Alike Than You Think

01Similar Refining Process


The first way sugar and heroin are similar is in how they are manufactured. Heroin starts out as opium extracted from the poppy plant. Then, it's refined into morphine and further refined into heroin. Originally it was touted as a new "non-addictive" painkiller. Now it's simply the most addictive drug in the world... besides sugar.

Sugar, similarly, begins as juice pressed from the sugar cane and is refined into molasses. Then, it's further refined into brown sugar and then white sugar. The resultant white sugar crystals we're all familiar with are completely stripped of any of their original nutrients (just like heroin).

Because of this, our bodies don't know how to react to the constant deluge of sugar. It throws our systems out of whack. Which leads to why they're both...

02 Addictive in Similar Ways


Both substances create an immediate rush (though heroin is much stronger initially). Heroin particles attach themselves rapidly to endorphin receptors, creating a rush of euphoria.

Sugar creates a smaller high and lands in the liver until it's redistributed through the body as fat. Sugar, like a drug, is incredibly addictive and habit-forming. In fact, it's estimated that as many as 95% of people are addicted to some degree or another.

03 Organ Damage


Heroin does most of its damage in the brain before moving to the heart and lungs. Most people never break the addiction and wind up overdosing.

Sugar-related damage in the body is much slower, but no less destructive. In fact, there's a case to be made that since sugar is ingested in such large quantities, the damage it does to the body is more pronounced and widespread.

Grilled Mushroom Steaks PDF Print E-mail



You will never miss the meat.  Serve with mashed potatoes and grilled asparagus on the side.  Add a salad and you will be stuffed at the end of dinner.  If you prefer burgers, just place the finished mushrooms on whole wheat buns and add some cheese.

Grilled Mushroom Steaks

  • 4 portabella mushroom caps
  • Garlic, to taste (optional)
  • 2 Tablespoons olive oil
  • 2 Tablespoons balsamic vinegar
  • Salt and Pepper to taste
  • Dried Parsley, to taste
Heat grill, or turn on oven to broil.  Drizzle liberally with olive oil and balsamic vinegar over mushroom caps.  Sprinkle on garlic, salt and pepper, and parsley.  Grill over medium heat for about 10-12 minutes, turning once.  This is one amazing meal.
 
Strawberry Spinach Salad PDF Print E-mail



  • 1 pkg Spring Mix salad greens (or Baby Lettuce)
  • 1/4 c sliced almonds or cashews
  • 1/4 c apple juice sweetened dried cranberries (or raisins)
  • 1/4 c red onion, finely chopped
  • 8 oz strawberries, sliced
  • 1 recipe strawberry vinaigrette
Strawberry Vinaigrette Dressing:
  • 1/8 c balsamic vinegar
  • 1/8 c raw honey
  • 1 1/4 c coconut milk
  • 5 large strawberries

For dressing: Blend all ingredients. Chill. For salad: Combine all ingdredients, except dressing, in a large salad bowl. Pour dressing over salad and toss just before serving.
